Food cost estimate and Final Balance: differences . When we refer to the cost of a plate of food we are talking about a bill and what we calculate by adding the cost of each ingredient in the amount necessary to prepare a portion, it is a food cost estimate . But when we evaluate the consumption of a given period, we talk about food cost balance, because it is calculated after the expenditure was incurred .
